Gouda Cheese Quesadillas with Pico de Gallo

Gooey quesadillas topped with fresh pico! From our friends at Dairy Farmers of Wisconsin.
- Combine the Pico de Gallo ingredients in a bowl and mix well. Season with salt to taste. Cover and refrigerate for at least one hour.
- Place one tortilla in a large skillet over medium heat. Layer with half of the gouda, chicken and 1/2 cup Pico de Gallo. Top with a tortilla.
- Cook for 2-3 minutes on each side or until cheese is melted. Transfer to a cutting board. Cut into wedges. Repeat with remaining ingredients.
- Serve with remaining Pico de Gallo.
