A quick and healthy snack that will be ready to enjoy in 15 minutes and easy to pack for work! From our 2022 Healthy Gatherings magazine.
- Preheat oven to 350°; line rimmed baking pan with parchment paper.
- In medium bowl, stir almonds, chia seeds, honey, cocoa powder, cinnamon, vanilla extract, and salt until almonds are well coated; spread on prepared pan and bake 10 minutes, stirring once halfway through. Cool 20 minutes.
- In same medium bowl, toss cereal, dried cherries, pepitas, and almond mixture; store in an airtight container up to 1 week. Makes about 2 cups.
