- Preheat oven to 400 degrees F. Lightly grease a 12-cup standard muffin tin or line with paper liners.
- Place Greek yogurt, bananas, eggs, oats, honey, baking powder, baking soda, and vanilla extract in a blender. Blend on high, scraping down the sides as needed. Blend until batter is smooth and oats are well incorporated, about 3 minutes. By hand, mix in any additional mix-ins.
- Pour batter directly from the blender into prepared muffin tins, fill each cup no more than three-quarters full.
- Bake for 15 minutes until tops are golden and a toothpick inserted in the middle comes out clean. Place pan on wire rack and let cool at least 10 minutes before enjoying.
