- Preheat oven to 375.
- Cut sourdough into one-inch cubes. Bake for 10 minutes until golden brown.
- Whisk all dressing ingredients together in a small bowl.
- In another bowl add arugula, strawberries, croutons and dressing and toss to coat.
- Divide salad between 4 serving bowls. Tear mozzarella or burrata and add to the top of each salad.
- *Optional: Serve with a drizzle with balsamic reduction
