- Heat a grill to medium-high heat
- Combine all ingredients other than the pork in a large mixing bowl and chill in the refrigerator until ready to serve
- Grill the butterflied loin for about 7-9 minutes per side, turning occasionally, or until an internal temperature of 145 degrees is reached
- Remove the tenderloin from the grill and allow to rest for 8-10 minutes
- To serve: slice the tenderloin into medium-thin slices, mix the salad again and transfer to a large rimmed plate, top with sliced pork
