- Soften ice cream slightly for easy scooping (about 5–10 minutes at room temp).
- Scoop a small spoonful of ice cream onto the flat side of one mini cookie.
- Top with a second cookie to make a sandwich.
- Gently press until ice cream spreads to the edges.
- Roll the edges in sprinkles, mini chocolate chips, or crushed candy if desired.
- Place on a tray and freeze for at least 30 minutes before serving.
