Pineapple Glazed Pork Loin

- Preheat the oven to 375 degrees
- Heat a large sauté pan over medium-high heat, and sear the pork loin on all sides
- Remove the pork from the heat and reserve
- Drain the pineapple rings, reserving the juice
- Place the onions and peppers in the bottom of a baking dish
- Top with the pineapple rings, then the pork loin
- Roast for about 25 minutes, or until the pork reaches an internal temperature of 150 degrees
- While the loin is roasting, combine the pineapple juice, soy, vinegar, garlic, ginger, allspice and cayenne pepper in a saucepan
- Bring the glaze to a boil, combine the cornstarch with a bit of water and whisk in to thicken to desired consistency
- When the pork is done, remove from the oven and allow to rest for 5 to 10 minutes before slicing
- Return the sliced pork to the pan and pour the desired amount of glaze
