Fruit Sushi

Sweet sushi rice topped with fresh fruit like mango, kiwi & strawberry and rolled in a fruit roll up. Kids will enjoy using chopsticks or their fingers for this fun treat.

  • 1 1/2 cups uncooked white sushi rice (do not use instant or minute rice)
  • 2 cups water
  • 1 can unsweetened full-fat coconut milk
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1 mango, sliced thin
  • 1-2 kiwi, sliced thin
  • 1 cup strawberries, sliced thin
  • Additional fruit, if desired, sliced thin
  • 6 Mott's Fruity Rolls

  1. Coconut Rice
  2. Bring water to a boil. Once boiling, add rice and cover. Let simmer for 15-20 minutes.
  3. In separate saucepan, slowly bring to boil coconut milk, sugar, and salt. Once boiling, remove from heat, and gently stir about ½ of the mixture into cooked rice.
  4. Let cool on a sheet pan before rolling into sushi rolls. (must be cooled completely)
  5. Fruit Sushi
  6. Place fruit roll on sushi mat.
  7. Add a thin layer of coconut rice to fruit roll.
  8. Add fruit in an even layer.
  9. Add another thin layer of rice and use sushi mat to wrap fruit roll around rice.
