One-Pot Lemon Broccoli Pasta

A vegetarian dish featuring rotini pasta & broccoli seasoned with fresh garlic, lemon juice, red pepper flakes & Parmesan cheese.

  1. In a large skillet or pot, bring the salt and 3 quarts water to a boil.
  2. While the water is coming up to a boil, prepare your broccoli by trimming the stems and cutting the florets into similar sized pieces.
  3. Once water is boiling, add the rotini and boil on high for 4 minutes. Add the broccoli, and continue to boil for 3 minutes.
  4. When the timer goes off, turn down the heat, and drain the pasta. After drained, set aside rotini & broccoli.
  5. Using the same pot, heat to medium and melt 4 tablespoons butter.
  6. Add the minced garlic and crushed red pepper and saute for about 1 minute, until fragrant.
  7. Turn off the heat and return rotini broccoli to the pan and stir.
  8. Add fresh lemon juice.
  9. Stir in 1 cup fresh parmesan cheese, season with salt and pepper to taste. Add lemon zest.
  10. Garnish with lemon wedges, more parmesan cheese, and enjoy!
