Fast. Simple. Healthy. Delicious. Kid-Friendly. Whip these up Sunday night and breakfast is ready all week.

  1. Preheat oven to 375 degrees F.
  2. Peel and mash both bananas in a small bowl with a fork.
  3. Whisk in the eggs until combined well.
  4. Spray a mini muffin tin with cooking spray.
  5. Drop enough berries into each muffin compartment to cover the bottom in a single layer and pour the banana egg mixture into each compartment all the way to the top.
  6. Bake for 12 minutes or until mixture is set.
  7. Store in refrigerator for up to 5 days.
