Summer Rolls

Raw carrots, cucumber, red cabbage julienned and rolled in rice paper. Topped with cilantro & dipped in peanut sauce.

  • 1 cucumber, julienned
  • 3 medium sized carrots, julienned
  • 1/4 red cabbage, julienned
  • Cilantro
  • Rice paper
  • Peanut Dipping Sauce
  • 1 tbsp. peanut butter (or less)
  • 3 tbsp. sunflower oil (or sesame oil)
  • 1 tbsp. Soy sauce
  • 1 tsp. honey
  • 1 clove garlic, minced
  • 1/4 tsp. red pepper flakes

  1. Julienne cucumber and carrots. Julienne cabbage with chef's knife.
  2. Prepare rice paper according to package (dip in room temp water for 10-15 seconds).
  3. Place rice paper on work surface, fill with veggies, wrap sides in and roll. Cut in half on diagonal.
  4. Peanut Dipping sauce
  5. With a fork, stir all ingredients in a small bowl until fully incorporated.
  6. Serve & enjoy!
